If one of your goals is to include more vegetables in your daily diet, it can sometimes seem daunting. How do you find time to prepare so many vegetables? Aside from dinner, where can you sneak in extra veggies? What if you’re at work in the afternoon – how do you get vegetables in then?

Love this! You make it sound SO simple, but I guess it really is that simple. I often find myself cooking with half of a vegetable (half a pepper in a stir fry, half a bag of carrots in a soup, etc) so this is a great way to use the extras, make sure they don’t go to waste, and get some veggies in every day! Thanks for the motivation 🙂
You know I am generally opposed to the concept of ‘sneaking’ veggies. C’mon, you’re an adult, eat your freaking veggies! haha 🙂
But I think that this is a great concept – and I think that in general making sure that there are simple ways to eat well will ensure that you DO eat well! Or at least better!
I accept the challenge. I will make veggie packets with the grandkids today. 🙂
