It’s time for another episode of Foodie Friday in a Flash, where I bring you 2-3 minute videos (OK, usually 3 minute videos!) highlighting one of my favorite foods and its health benefits! Today, we’re discussing … APPLES!

Now how about a recipe, for my Healthier Apple Crisp for Two? Although a microwaved apple with cinnamon is pretty delicious, this takes apple crisp to a whole new level. The heartiness of the crumble topping along with the sweetness and warmth of the apples will make you want to cozy up near a fire and share this delicious dessert with someone special! (Or eat it all on your own … or eat it for breakfast … no judgment here! :))
Apple Crisp for Two!

Ingredients (2 servings)
For the Crumble
- 1 Tbsp. oats
- 2 Tbsp. unsweetened shredded coconut
- 1 tsp. almond meal
- 1 tsp. cinnamon
- 2 tsp. coconut oil, softened
- 1 tsp. lemon juice
- 5 drops liquid stevia
For the Apple “Filling”
- 1 apple, diced
- 1 tsp. lemon juice
- 1 tsp. cinnamon
Instructions
Preheat oven to 400 degrees.
In a small dish, mix oats, shredded coconut, almond meal, and 1 tsp. cinnamon. Add softened coconut oil, 1 tsp. lemon juice, and stevia, and stir gently until a “crumble” texture forms.
In a separate bowl, combine diced apple, remaining 1 tsp. cinnamon, and remaining 1 tsp. lemon juice.
Add apple mixture to a small, oven-safe container (or mini-skillet!), and sprinkle crumble on top.
Bake 23-25 minutes, or until crisp is golden brown.
Enjoy, topped with a dollop of Greek yogurt, a bit of warmed almond milk, or all on its own!
Nutrition: Each serving (1/2 the recipe) will have 142 calories, 8g fat, 17g carbs, and 1g protein.
