Welcome to a brand new series … called Foodie Friday in a Flash! I’ll be bringing you 2-minute videos highlighting one of my favorite foods, along with its health benefits. I’m kicking off the series with a feature on avocados … one of my very favorite ways to make a dish even tastier, especially during the summer. Watch the video below for the health benefits of avocados (will eating fat make you fat?), plus my top 5 ways to enjoy avocados!
I mentioned my “Summer Refresh-Mint Smoothie” in the video, and I want YOU to be able to enjoy it. It’s super easy to make, has a great nutritional balance, wonderful creaminess from the avocado, and all kinds of fresh, summer flavors. Enjoy!
Summer Refresh-Mint Smoothie

Ingredients (1 large smoothie)
- 1 scoop Juice Plus+ Complete Vanilla protein powder (buy yours here: http://meganlyons.juiceplus.com/content/JuicePlus/en/buy/complete/juice-plus–complete-variety.html#.VJ2An7gBNKc)
- 1/2 cup cucumber
- 2 cups Romaine lettuce
- 2 sprigs mint leaves
- 1/2 cup unsweetened vanilla almond milk (or other milk)
- 1/4 medium Hass avocado
- 1/2 cup frozen pineapple chunks
- 1/2 – 1 cup ice
- 1/2 – 1 cup water
Instructions
Add all ingredients to high-powered blender.
Blend until smooth, and enjoy!
The recipe contains 8g fat, 34g carbs, 17g protein.
Serving up the Avocado Love
I was given the opportunity to work with the Hass Avocado Board through my partnership with Around the Plate. I introduced two groups of people to special recipes using the natural healthy fats in Hass avocados! The first was a dance studio, where I gave my “Eating for Energy” workshop and served my Veggie-Loaded Guacamole (check it out if you haven’t yet – so good!).
The second was in one of my networking groups, where I presented about my business, gave health tips, and served two smoothies – including the Summer Refresh-Mint Smoothie from above! I know I look a little bit excited – nothing gets me amped up like talking about nutrition 🙂

Totally love avocados … but for whatever reason no matter how many I buy, they never make it into my smoothies! haha Love your smoothie recipe – will really have to try after our next college visit tour to grab more and get them into a smoothie (we have mint in our herb garden … total weed! )

Love avocados in smoothies! It makes them so deliciously creamy! Too bad no pineapple for me… the “reds” are the one thing I’ve been good about avoiding! Mostly…
I have also made this smoothie with yellow watermelon instead of the pineapple … it also mixes well with mint and tastes very summery! Good for you for sticking to your reds for the most part !
you are too cute! we love juice plus capsules. I can’t do the protein because of soy. I’m still trying to convince them to do a brown rice protein! maybe soon

I would LOVE if Juice Plus did a brown rice protein!!! I’m not anti-soy in moderation but I agree brown rice would be more friendly to most people! I don’t take the capsules myself but recommend them to some clients who just don’t or can’t get in a broad spectrum of antioxidants and nutrients through fruits and vegetables!
I’m also obsessed with avocados but never thought of putting them into a smoothie. You do always have great ideas
