Baked Pumpkin Oatmeal

Baked Pumpkin Oatmeal

Servings: 9 servings

Ingredients
  

  • 2.5 cups rolled oats
  • 1 cup cottage cheese
  • ¾ cup egg whites
  • ¼ cup almond milk
  • 1/3 cup maple syrup I used sugar-free allulose syrup
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1.5 Tbsp chopped pecans
  • 3 teaspoons monkfruit powdered sugar

Method
 

  1. Preheat oven to 425 and grease 9×9 or 12×9 casserole dish
  2. Stir together all ingredients except powdered sugar and pecans, and spread in pan
  3. Bake for 35 minutes or until golden brown
  4. Top with powdered sugar and pecans
  5. This is not very sweet, so if you want sweeter, feel free to increase maple syrup or add additional sweetener

Notes

For each of 9 servings, a serving contains 127 calories, 3g fiber, and 8g protein.
I am using this as a quick pre-workout carb.  If you want to use it as a meal, I suggest increasing the portion size and adding significantly more protein!

    This looks amazing. However I detest monk fruit. What’s the best substitute?

      Fine to skip it (it’s mostly for looks) or use regular powdered sugar! (1/3 teaspoon per serving won’t move the needle).
