Irresistable Baked Veggies

Ingredients
  

  • AIP Paleo Powder seasoning https://amzn.to/3YAYoAd
  • Avocado oil spray https://amzn.to/3yIiyg5
  • Assorted veggies Cut into bite size pieces

Equipment

  • parchment paper https://amzn.to/4y6mSB5

Method
 

  1. Preheat oven to 425
  2. Line baking sheets with parchment paper and spray the sheet with avocado oil spray
  3. Cut vegetables into bite-sized pieces, spray with avocado oil again, and sprinkle with AIP Paleo Powder seasoning
  4. Most vegetables will need to roast 22-30 minutes, longer for starchier vegetables (like the kabocha squash I have here or potatoes) and shorter for non-starchy vegetables (like zucchini, broccoli, green beans). Watch until they are browning slightly and then remove!

Notes

Here I have roasted kabocha squash, green beans, brussels sprouts, and pan-seared salmon, cod, or halibut.
