Pumpkin Chicken Chili

Pumpkin Chicken Chili

Ingredients
  

  • ½ onion diced
  • 16 oz chicken breast boneless, skinless
  • 3 small zucchini diced
  • 1 cup frozen cauliflower rice
  • 1 can Great Northern beans drained and rinsed
  • 1 cup canned pumpkin
  • ½ cup full-fat coconut milk
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • ½ tsp oregano
  • ½ tsp red chili flakes
  • 1 Tbsp cumin
  • ½ tsp nutmeg

Equipment

  • Instant Pot

Method
 

  1. Add the onion, chicken breast, zucchini, cauliflower rice, Great Northern beans, pumpkin, coconut milk, chicken broth, diced tomatoes, oregano, red chili flakes, cumin, and nutmeg to the Instant Pot.
  2. Seal the Instant Pot and cook on Manual for 20 minutes.
  3. When finished, allow the pressure to release.
  4. Remove the chicken breast and shred it with two forks.
  5. Return the shredded chicken to the pot and stir.
  6. Divide into 4 servings.
