Chicken Curry Salad

Chicken Curry Salad

Ingredients
  

  • 16 oz chicken breast boneless, skinless
  • cups plain Greek yogurt
  • 2 Tbsp avocado mayo
  • 5 large stalks celery diced
  • 1 bell pepper diced
  • ½ cup chopped parsley
  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • ¼ cup pistachios
  • Tbsp curry powder
  • 1 Tbsp honey optional
  • Avocado oil spray

Method
 

  1. Preheat oven to 425°F. Spray the chicken breast with avocado oil and bake for 25 minutes, or until cooked through.
  2. Add the Greek yogurt, avocado mayo, baked chicken, celery, bell pepper, parsley, cabbage, carrots, pistachios, curry powder, and optional honey to a bowl.
  3. Mix until well combined.
  4. Divide into 4 servings.
  5. Serve over greens or in lettuce boats.
