Veggie Loaded Pickle Chicken Salad

Ingredients
  

  • 16-20 oz Chicken breast (boneless, skinless)
  • 4 cups Cabbage (shredded)
  • 1 cup Carrots (shredded)
  • 1 Bell pepper (diced)
  • 6 stalks Celery (diced)
  • 1/3 cup Red onion (diced)
  • 1/3 cup Pickles (chopped)
  • 2 containers Plain Greek yogurt
  • 1 Tbsp Avocado mayo
  • 2 Tbsp Red wine vinegar
  • 2 Tbsp Relish
  • 3 Tbsp Mustard
  • 1/2 Tbsp Garlic (minced)
  • 1/4 cup Dill (minced)

Method
 

  1. Preheat oven to 425°
  2. Bake chicken for 24 minutes or until cooked through. Set aside to cool
  3. Dice chicken once cooled, and combine with remaining ingredients
  4. Divide between 4 dishes and store

Notes

Each serving has 278 calories, 35g protein, 6g fiber. I recommend pairing with rice cakes or seedy crackers to eat.
