Tomato Basil Crustless Quiche

Ingredients
  

  • 3 Zucchini diced
  • 1/4 cup Bone broth
  • 6 cups Spinach
  • 1/2 carton Cherry tomatoes halved
  • 5 Eggs*
  • 1.75 cups Egg whites*
  • 1/4 cup Chives dices
  • 1/4 cup Basil
  • Salt
  • Pepper

Method
 

  1. Preheat oven to 425*
  2. Sauté zucchini in a skillet with bone broth
  3. Add spinach, stir occasionally until wilted
  4. Add mixture to casserole dish & top with a layer of halved cherry tomatoes
  5. Separately, whisk eggs & whites, chives, basil, and season with s&p.
  6. Pour over veggies in casserole dish
  7. Bake for 40 minutes

Notes

*Can use 12 eggs, or 3 cups whites
Each serving has 180 calories, 29g protein, 3.5g fiber. I recommend pairing with a fiber-rich bread (I like Carbonaut gluten-free seeded) with ¼ avocado and some fruit for more nourishment and fiber.
