Breakfast Casserole

Ingredients
  

  • 1 bag cauliflower rice
  • 1 bag broccoli slaw
  • 1 diced onion
  • 1 Tbsp minced garlic
  • 1 Tbsp ghee
  • 1 lb 99% lean ground turkey
  • 1 Tbsp cumin
  • 6 eggs
  • cups liquid egg whites
  • 1 cup salsa
  • ½ cup cottage cheese optional
  • Everything But the Bagel seasoning to taste
  • Additional seasoning blends to taste
  • Cooking spray or oil for greasing the casserole dish

Method
 

  1. Prepare the vegetables: Preheat the oven to 425°F. Grease a casserole dish and layer the cauliflower rice and broccoli slaw in the bottom. Sprinkle with your favorite seasoning blends.
  2. Cook the turkey mixture: Heat the ghee in a skillet over medium heat. Sauté the diced onion and minced garlic until softened. Add the ground turkey and cumin, and sauté until the turkey is cooked through.
  3. Assemble the casserole: Spread the cooked turkey mixture over the vegetables.
  4. Prepare the egg mixture: In a separate bowl, whisk together the eggs, liquid egg whites, salsa, and optional cottage cheese.
  5. Combine: Pour the egg mixture evenly over the turkey and vegetables.
  6. Bake: Sprinkle the top with Everything But the Bagel seasoning. Bake for approximately 40 minutes at 425°F, or until the eggs are set and the casserole is cooked through.
  7. Serve: Allow to cool slightly, then divide into 6 servings.
