One-Pan Chicken Burrito Bowl

Ingredients
  

  • 1 large chicken breast (about 12 oz raw)
  • 0.75 cup dry jasmine rice
  • 0.75 cup chicken broth
  • ½ cup mozzarella cheese
  • ½ medium yellow onion
  • 1.5 Tbsp. minced garlic
  • 1 cup canned or frozen corn
  • 4 small or 2 large zucchini
  • 1 bell pepper
  • 1 14 oz can black beans
  • 16 oz jar salsa
  • 1 tsp Paprika
  • 1 Tbsp Cumin

Method
 

  1. Preheat oven to 425°
  2. Cut chicken into bite-size pieces
  3. Spray a large casserole dish with avocado oil spray.
  4. Cover the bottom of dish with rice, diced onion, garlic, and chicken broth. Stir.
  5. Layer on chicken, black beans, corn, diced zucchini, diced bell pepper, salsa, spices, and cheese, in that order.
  6. Cover with foil and bake 40 minutes.
  7. Remove foil and bake 5 more minutes.

Notes

Each serving has 441 calories, 35g protein, 12g fiber.
