Jennifer Aniston Viral Salad (Lyons’ Share Version)

Ingredients
  

  • .75 cups Quinoa (cooked)
  • 1 can Chickpeas (drained & rinsed)
  • 5 Mini cucumbers (diced)
  • 5 Celery stalks (diced)
  • 1/4 cup Red onion (diced)
  • 1/4 cup Slivered almonds
  • 1/4 cup Raisins
  • 1/4 cup Kalamata olives (sliced)
  • 3/4 cup Parsley (diced)
  • 1/4 cup Basil (diced)
  • 1/4 cup Dill (diced)
  • 4 oz Feta (optional) (I use fat free)
Dressing
  • 2 Tbsp Olive oil
  • 4 Tbsp Lemon juice
  • 1/2 Tbsp Honey
  • Salt & pepper (to taste)

Method
 

  1. Add quinoa to 1.75 cups of water and bring to a boil
  2. Cover & simmer for 15 minutes, then let cool
  3. Combine dressing ingredients
  4. Toss quinoa and all remaining ingredients with dressing, and add salt & pepper to taste

Notes

Each serving has 450 calories, 9g fiber, 20g protein.  This is a relatively carb-heavy meal (60g carbs), so if you need different ratios, feel free to add canned tuna or salmon, or baked chicken or tofu, and make into 6 servings instead!
