Egg Muffins

Egg Muffins

Ingredients
  

  • Veggies of choice (frozen cauliflower rice, frozen fajita vegetables, and torn up raw spinach/spring mix, etc.)
  • 1 carton Liquid egg whites (20 servings)
  • Avocado oil spray

Method
 

  1. Preheat oven to 425°
  2. Spray 20 muffin cups with avocado oil spray
  3. Fill each cup with lightly packed vegetables of choice
  4. Pour liquid egg whites over veggies
  5. Bake 20 minutes

Notes

Each egg muffin has 32 calories, 6g protein, and 0.5g fiber, so eat as many as you need.  I’m eating 4 muffins plus some chicken sausage, berries, and kiwi for breakfast this week!
