Chicken Satay Stir Fry

Chicken Satay Stir Fry

Ingredients
  

  • 1 lb Ground chicken (lean)
  • 1 Tbsp Avocado oil
  • 1/2 Onion (diced)
  • 1.5 Tbsp Garlic* (minced, reserve .5 Tbsp for dressing)
  • 2 Tbsp Ginger* (minced, reserve 1 Tbsp for dressing)
  • 8 cups Coleslaw mix
  • 1 cup Shredded carrots
  • 4 Green onions (diced)
  • 1/2 cup Cilantro (minced)
Dressing
  • 1/4 cup Peanut butter
  • 1/4 cup Tamari
  • 1/2 Tbsp Honey
  • 2 Tbsp Rice vinegar
  • 1 tsp Sesame oil

Method
 

  1. Saute onion, 1 Tbsp garlic, and minced ginger in 1 Tbsp avocado oil
  2. Add ground chicken and saute until cooked through
  3. Remove chicken and set aside
  4. In same dish, add coleslaw mix and shredded carrots. Cover and steam for about 4 minutes until just softened
  5. In a mason jar, shake peanut butter, tamari, remaining garlic, ginger, honey, hrice vinegar, and sesame oil.
  6. Add chicken back to veggies and pour sauce over all. Add cilantro and green onions and stir.

Each serving has 355 calories, 33g protein, 7g fiber
