Spinach Artichoke Crustless Quiche

Ingredients
  

  • 1 tbsp Sassy Seasoning
  • 1/2 onion diced
  • 1 tbsp garlic minced
  • 3 small zucchini diced
  • 1 can artichoke hearts
  • 1 bag frozen spinach
  • 3 cups egg whites
  • Feta optional
  • Salt & pepper to taste

Method
 

  1. Saute onion, garlic, zucchini, and artichoke hearts until zucchini is soft.
  2. Add frozen spinach and stir.
  3. Transfer veggies into sprayed baking dish, sprinkle with salt & pepper, and add egg whites. Top with feta if using.
  4. Bake at 425 for about 30-35 minutes, or until middle no longer jiggles.
